This 1 minute keto chocolate chip cookie is a perfect for work, or as a quick portion-controlled snack at home.
These are a slightly modified version of my classic keto chocolate chip cookies (also available in The Keto Sweet Tooth Cookbook)
Will these 1 Minute Keto Chocolate Chip Cookies be perfect every time?
Single chocolate chip cookies can be a little hard to get right the first time because it all depends on a few things:
- The grind of the almond flour you use (coarseness)
- Microwave power
- The humidity of your climate
I suggest you follow this recipe but make alterations to suit your own ingredients and microwave settings to get this recipe perfect for you.
Microwave Power Settings
I use an 800W microwave, so add or subtract 10 seconds if your microwave is more powerful or less powerful than mine.

Classic Keto Chocolate Chip Cookie (Most Popular)
1 Minute Keto Chocolate Chip Cookie
Ingredients
- 0.35 oz butter softened
- 1 tsp Monkfruit / Erythritol Sweetener
- 3 Tbsp almond flour (0.5 oz / 15g approx)
- 1 tsp egg whisked
- 1 Tbsp Sugar Free Chocolate Chips
- pinch salt (optional)
Instructions
- Measure out the butter into a ramekin, add the monkfruit sweetener, and mix together until combined.
- Place in the almond flour and egg mixture, then mix around until well combined. It should be just coming together, not too wet.
- Add the sugar free chocolate chips, and combine.
- Press into the bottom of the ramekin (or for easier removal, use a cupcake liner), optionally add a few extra chocolate chips on top, then microwave on high for 45 seconds. (800W microwave)
- Remove from the microwave and chill in the fridge for 5 minutes to harden, then enjoy.

This was pretty good, a great quick treat I can make while my hubby gets his nightly ice cream. The recipe was a little sweet for me but I can adjust that next time. I messed up and bought a case yes a case of what I thought was ghardelli dark chocolate chips however a box of white chocolate was in it’s place at the store, so that’s what I used (maybe that is why it was too sweet). Next time I think I might add a couple macadamia nuts. Love your recipes thank you for your work.
