Chocolate Espresso Truffles

Some of you might know what Chocolate Espresso Truffles are, but do you know where the shape comes from?

A Chocolate truffle is a type of chocolate confectionery, usually in a spherical shape that resembles the truffle, and edible part of the tuber fingus. Interesting right?

Traditionally, made with a chocolate ganache center and coated in cocoa powder or chopped nuts (typically hazelnuts, almonds or coconut… keto perfection!)

An espresso truffle like the ones shown above is exactly like a ketogenic fat bomb, just coated in a little extra cocoa and mixed with some delicious extra ingredients that make the coconut oil taste good. Traditionally, I’m not usually the biggest fat of fat bombs, only because I feel like I’m consuming fat for the sake of it, and it’s also kinda gross. This I feel is because we have grown up to hate the taste of too much fat. It’s not something that we were introduced to as kids or acquired the taste as adults throughout the low fat craze.

Anyway, The base of these espresso chocolate truffles is very similar to the base from my Keto Rum Balls but doesn’t have the rum flavor. Instead, I’ve added some espresso extract (coffee extract) and some REAL espresso with a little bit of caffeine to really enhance the flavor, and give it some bite.

Unlike Gourmet chocolate truffles, these fantastic little balls won’t send you broke. Truffle balls are expensive when purchasing from a store… or clear glass window with a smirky salesman behind the cash register. These are perfectly keto friendly, and the nutritional values are displayed in the recipe text below.

This was the recipe I was supposed to make live on facebook, but instead made some Keto Eggnog. I really hope you like these as much as I enjoyed makin the recipe.

Ingredients

  • 1/4 Cup Cocoa Powder
  • 1/4 Cup Coconut Oil (Refined)
  • 1/4 Cup Almond Flour
  • 2 Tbsp Cocont Flour
  • 2 Tbsp Heavy Cream
  • 2 tsp Natvia (Or Swerve)
  • 30 ml Coffee Shot (1 0z)
  • 1 tsp Espresso Extract

Instructions

  • Mix all the ingredients together in a bowl. Combine until sticky. Depending on the weather, if it gets too sloppy, just add some more coconut flour to the mix.
  • Roll into balls and roll in some extra cocoa powder.
  • Refrigerate on a plate and enjoy!

    Cab you make these without (or with a substitute for) the heavy cream? I’m not doing a dairy-free keto program…

      Hey Ine, Try using coconut cream. I find it really helps bind the ingredients.
