Keto Cinnamon Rolls
Keto Cinnamon Rolls are a sweet cheesy dessert which is made from fathead pizza dough, mixed with stevia to give it a slight sweetness alongside the cinnamon. Its the perfect dessert for a cheese lover alike.
As a food blogger with a full-time job, my only time to make recipes is on the weekend. Much to Adele’s disgust (my Girlfriend), it’s the only time to get the best natural light for the photographs! She would much rather be outside – once I earn some money from this blog, she’ll be the first person I spend it on!
As I was busy preparing my recipes, I had one of my hair-brained ideas… What If I created a sweet dessert with the famous fathead pizza base?
The first few batches I tried turned too sloppy. This was because I either had cooked the recipe for too long or at a higher temperature than necessary. After ironing out the kinks during my “on-the-fly” recipe development, I thought it would be a shame to not put this on the website! – Sure enough, it worked!
Let me Show You My Keto Cinnamon Roll Secrets
You first have to get the mozzarella cheese melted nicely. This is key, otherwise, you’ll be fighting an uphill battle trying to get the egg to mix in properly, or the almond flour won’t combine thoroughly. This is in a bowl after it’s been microwaved for 90 seconds.
Once you’ve added the almond flour to the recipe (and I recommend 3/4 of a cup) your mixutre should look a little bit like this. If its not this dry, then put more almond flour in until it reaches this consistency.
The best way to roll out fathead dough is to make sure you use two sheets of baking paper and a rolling pin. This is the best way to get a consistent thickness, without breaking the recipe in half.
After you’ve baked off the dough slightly, you need to cool it slightly so that the cheese doesn’t just melt into a big pile of goop. I use the bottom of an ice tray to cool the dough down enough to be able to roll it, whilst still holding it’s shape.
Spread the cinnamon mixture out along the dough with the back of a spoon. Make sure you get a good coverage of the entire section of the dough so that you have even coverage 😉
Your roll should look a little like this. You will need to use the baking paper to get this started, but it will roll up nicely once you get some momentum going.
Place them in the pan, and cook them for the required time. You’ll need to cover with icing once it’s done, but your rolls will look a little like thise :-).
Oh, and by the way, Ziploc bags make perfect icing pipers. I don’t own a piping device, and I don’t think they’re necessary unless you’re making cupcakes.

The icing is a mixture of cream cheese, cream, and stevia. These are really delicious, so don’t be alarmed by the fact that there is cheese and sweet together. Delicious Keto Cinnamon Rolls!
Cheese and sweet go together very well, which is why many restaurants have cheese on the dessert menu. Not only does cheese and sweet go together, but cinnamon sweetens anything. If you’re someone who enjoys stevia in their coffee, you should try adding some cinnamon to replace the sweetness. Thank me later!

Micronutrients In This Recipe:
Calcium
Much like milk, Cheese contains plenty of calcium. 100g of cheese contains 100% of your daily calcium needs. Calcium is actually not a micronutrient that you need to worry about because so many people already have too much calcium in their body. Little known fact, excess calcium can actually cause you to lose magnesium, so go easy on your daily cheese intake!
Magnesium
Cheese contains some magnesium, but it’s not enough to rely on without either supplementing or eating plenty of dark leafy green vegetables. Magnesium is definitely a micronutrient to make sure you are getting adequate doses of each day, as it is used in so many different chemical reactions throughout your body.
Zinc
Cheese contains some zinc. Zinc is an important nutrient to create testosterone for males, healthy hair, and nails, whilst keeping your metabolism in check with your natural hunger. If you find you become unable to eat, or appetite is very low, it’s usually a zinc deficiency.

Keto Cinnamon Rolls
Ingredients
Base
- 1.5 Cups Mozzarella Cheese
- 2 Tbsp Cream Cheese
- 1 Egg
- 3/4 Cups Almond Flour
- 1 Tbsp Erythritol (SoNourished)
Cinnamon Inside
- 1 Tbsp Erythritol (SoNourished)
- 1 tsp Cinnamon
- 1 Tbsp Warm Water
Icing
- 1 Tbsp Cream Cheese
- 1 Tbsp Heavy Cream
- 1 Tbsp Erythritol (SoNourished)
Instructions
- Mix the cheese together into a microwave safe bowl, and heat on high in 30 second increments until the mixture is melted just enough to be able to bind completely. (this should be about 1.5 mins)
- Mix in the stevia, egg, almond flour. Put in between two sheets of parchment paper and roll out into a rectangle.
- Place the dough in the oven flat out for around 5 mins at 180C (355F). Remove from oven and let it cool slightly.
- Mix the stevia, cinnamon, and water in a small cup and spread over the rolled out cheese mixture.
- Begin from one side, and roll the scrolls into one long roll. Cut into 2 finger lengths and place onto a baking tray. Put in the oven at 180 C (355F) for another 7 mins.
- Mix the cream cheese, cream and stevia together and but it into a plastic bag. Cut the corner off and pipe over the cinnamon scrolls. Enjoy!

How many rolls does this recipe make?
How wide are the sliced rolls before baking, since everyone’s fingers are not the same size? 1.5″ inches?
Instead of adding water to the filling, you could spread some melted butter over the dough and sprinkle the cinnamon mixture on top, using a baking ruler to keep the borders clean.

Could I use monk fruit instead of stevia? My dough stuck to the parchment paper. When I baked it, the rolls stuck to the pan. Any solutions?

In the ingredients for the base, it says that there is cream cheese in the base. But in the instructions, the only place it says to add cream cheese is for the icing. So, is there actually cream cheese in the base? Thanks!

It says to mix the cheese together and microwave. I presume that’s both cheeses, since it calls it a mixture.

These are wonderful! I only had almond meal, so they had a whole wheat texture to them. Also added a few drops of vanilla to the filling, a few drops of vanilla and a few drops of squeezed lemon juice to the frosting with an additional 1/2tbs cream cheese. Only baked for 2 more minutes, and slightly flattened dough with the bottom of a bowl. They tasted amazing! Fantastic recipe that I tailored to my preference since I love vanilla. Cant wait to try it with normal almond flour!

Hi there! Was curious is it 1.5 cups as in 12 ounces of block mozzarella cheese or 1.5 cups shredded cheese? Since as you know a 8 oz block equals 2 cups shredded. Thank you in advance! 🙂

Just made these for my birthday breakfast yesterday and I loved the flavor of these rolls! Thanks for posting. My rolls ended up coming out a bit too doughy. I had added an extra 1/4 C. of almond flour and even cooked them 3 extra minutes. I used Bob Red Mill super fine almond flour. Do you have any suggestions to make the dough texture feel more fluffy or cooked all the way through?

Can any of the recipes ( like cinnamon rolls) be made ahead and frozen?

I’ve actually never frozen them, due to their melting behavior, however, if you defrost them slowly I think this should work perfectly.

Wow! These were delicious! Thank you for teaching me about using cheese for keto dough. I doubled this recipe and thought the cinnamon mixture was too runny (but that could’ve been because I used tap water instead of warm water). Anyhow, I did add a couple tablespoons of butter to the cinnamon filling to help it spread well. Turned out great!
