Keto Dark Chocolate
Ingredients
- 1/2 Cup Coconut Oil
- 1/2 Cup Cocoa Powder
- 3 Tbsp Powdered Erythritol
- 1/2 tsp Vanilla Extract
- pinch Salt
Instructions
- Melt the coconut oil in a saucepan, adding in the cocoa powder, erythritol, salt and vanilla extract.
- Pour into the chocolate mold (I got 2 molds out of this mixutre)
- Place in the freezer on a level shelf until solid.

I use one ice cube tray for this recipe. It makes perfect, snack size portions.
Freeze 10 minutes or longer, then they pop right out of mold.
I put them in a sandwich baggie or plastic container in the fridge.

The BEST!! Super easy and super FAST!
I followed directions exactly and mine turned grainy, too (but didn’t change quality when frozen.)
Now I melt coconut oil just until lukewarm, add it and everything else to my Vitamix, start on low speed and move to high for 30 seconds. DONE!! (Seriously, it has taken me longer to write this comment than make this chocolate!!)
Pour into molds and freeze for 5-10 minutes.
I have poured mixture over nuts, shredded coconut, etc. for variety.
My husband is diabetic and this recipe satisfies his sweet tooth…. without affecting his sugars. Wonderful!
