Recently I found cauliflower rice here in Australia at coles, (and Woolworths) so go ahead and grab as much as you need, and save yourself the trouble of cutting up the cauliflower into rice-sized pieces. An alternative, if you have a food processor, ricing cauliflower is super easy.

Keto Teriyaki Tofu
Ingredients
- 500 g Organic Tofu (1 lb)
- 1/3 cup Coconut Oil
- 1 tsp Ginger grated
- 1 medium Onion thinly sliced
- 2 Tbsp soy sauce
- 1 Tbsp Erythritol
- 1 tsp Sesame Oil
- 1/2 cup water
- 1 shallot chopped
- 1 tsp Toasted sesame seeds garnish
- 1/2 Medium Cauliflower (riced)
Instructions
- Slice the cauliflower into small pieces (rice-sized pieces) and place in the steamer basket above water. Cook for 10-15 mins.
- Cut the tofu into large cubes, and pat dry with a paper towel.
- Place the coconut oil into a frying pan, and fry the tofu, turning onto each side until crispy.
- Remove the tofu from the pan and add the onion and grated ginger. Cook until transparent.
- Then, add the soy sauce, erythritol, sesame seed oil, water and the pre-cooked tofu.
- Let it simmer for 5 mins on low.
- Serve with cauliflower rice.

This recipe looks good and I plan to try it this week. Just a couple of points, firstly, can I substitute stevia for the Erythritol, and secondly, on the nutritional information it states that the protein content is only 3 grams per portion which seems rather low. Does organic tofu contain less than ‘ordinary’ brands which contain anywhere between 8 – 14 grams per 100 ? the recipe works out at 125 grams of tofu per person. Hope you can clarify.

Hi Mim, yes, stevia for erythritol is fine. Potentially the protein values could be higher depending on the tofu you use, and the serving size.
