Cheesy Low Carb Garlic Bread
This cheesy low carb garlic bread is actually surprisingly low carb, and high in healthy butter fats to keep you energized throughout the day.

Ingredients
  • 1packet Atkins Bread Mix
  • 260ml water(8.8 floz)
  • 50g Buttersoftened (2.8 oz)
  • 2tsp minced garlic
  • 1Tbsp dried parsley
  • 100g Grated Mozzarella3.5 oz
Instructions
  1. Remove the bread mixture and yeast sachet from the Atkins bread packet. Pour the bread mix into a large bowl, along with the water and yeast. Mix for 3 minutes until well combined.
  2. Cover the bowl, and let it rest for 45 minutes to ensure the yeast has enough time to rise a little.
  3. Preheat your oven to 200C (390F). Split the dough into two, and roll each portion out into a 20cm bread roll. Place on a baking tray and bake for 45-50 minutes until golden brown on the outside. Let it cool on the bench for 15 minutes.
  4. In a smaller bowl, combine the softened butter, garlic, dried parsley and salt. Mix until well combined, then set aside.
  5. Slice the bread lengths 3/4 of the way down vertically into 10 slots. fill each slot with approximately 1/2 tsp of the garlic butter. Cover in grated mozzarella and place under the grill (broiler) for 5 minutes until golden brown.
  6. Serve warm. Can be kept covered in the fridge for 3 days, of frozen for up to 3 weeks.
Recipe Notes

If you are running short on time, you can also let the bread rise for just 25 minutes.

I found letting it sit for 45 mins produced the best yeast activation, but this is up to you.
