Chicken lettuce cups can be easily made with a few large leafs of an iceberg lettuce. They make great ingredient baskets for which you can fill plenty of ketogenic friendly ingredients into without expecting the case to crumble (Like most other healthy wraps).
This weeks recipes revolve around chicken, bacon, avocado and tomatoes. This recipe didn’t need to include any bacon, but I found that creamy sauces fill the void between a boring keto salad and a meal that you actually look forward to at lunchtime.
The chicken is baked in the oven, so that the moisture is contained without having to fry or dry the exterior. Baking chicken breast is probably the most simple way to cook chicken, mess-free.
The creamy coriander sauce contains a few extra ingredients, but just plain old mayonnaise can easily keep things fresh. Make sure the mayonnaise doesn’t contain any hidden nasties like sugar or sugar imposters.

This week’s recipes will be staring bacon and chicken, avocado, lettuce, herbs and tomatoes (not necessary, but make for some wicked colour combinations).
I’m eating these for lunch during this week, and will combine the recipes together in a blog post so that you can do the same!
Less Ingredients, less waste!
Nobody likes recipes that requires hundreds of different ingredients just to make it taste like “The Real Thing”.
On top of that, no one likes it when they have to buy all of those different ingredients, only to throw them away a week later because none of the other recipes required any of the same ingredients.
I’ve done the fancy cheesecakes, and decadent desserts, and as much fun as they are to make and share with your friends, I’m not sure anyone would have actually made them…

Chicken and Bacon Lettuce Cups with Creamy Coriander Sauce
Ingredients
- 1 Chicken Breast
- 3 Lettuce Leafs
- 3 Chery Tomatoes
- 1 Tbsp Red Onion
- 3 Tbsp Mayonnaise
- 1 Tbsp Coriander Chopped
- Salt and Pepper
- 1 Tbsp Sesame Seed Oil
Instructions
- Place the chicken breast on a baking tray, cover with some sesame seed oil and bake @ 180° C (375° F) for 20 mins
- Cut 3 large leaves of iceberg lettuce from the stalks to make cups. Slice up the tomatoes and red onion and fill the inside of the cup
- Slice the breast into small chunks and place inside the lettuce leafs.
- Mix the mayonnaise with the coriander, add a little sesame seed oil and drip over the lettuce cups. Cover with salt and pepper and enjoy!
