Keto Almond Cake
Ingredients
- 1 Cup Butter 230g / 8 oz (Softened)
- 4 tbsp Erythritol
- 2 tsp Cinnamon Ground
- 2 tsp Mixed spice
- 1 tsp Almond extract
- 4 Large Eggs
- 1.5 Cups Almond Flour Or Almond Meal
- 2/3 Cup Dried Cranberries Low Sugar Version
- 1 tsp Orange zest
- 1 tsp Orange zest
Instructions
- Preheat the oven to 180 C (355F)
- Place the melted butter and sweetener into a bowl and beat until pale and fluffy.
- Add cinnamon, mixed spice and almond extract and mix again.
- Add 4 Eggs, one at a time, mixing between each one.
- Add the almond meal, dried cranberries and orange zest.
- Mix until well combined.
- Place into a round baking tin and cook for 20 mins, or until it passes the skewer test.
