Thai chefs have a unique ability to mix coconut into everything. This little secret works out a treat for us because keto recipes SHOULD include coconut in everything! It's the miracle pill that helps your brain maintain peak function whilst simultaneously losing weight.
Pre chop all the vegetables. Cut the zucchini into long strips, and the carrot into small diced pieces.
Add the coconut oil to the pan and heat up the oil with the ground garlic cloves and ginger. Next, add in the red onion. cook for about 3 mins.
Add the carrot to the pan, and 2 mins afterwards add the rest of the vegetables.
Remove from the frying pan and put onto a seperate plate. Add the beef strips to the pan and cook until lightly brown using the left over oil.
Add the vegetables back into the pan along with the coconut milk, stock and basil. Bring the pan down to a low simmer, add the cashews (optional) and let it cook for 5 mins.
Place into bowls and serve!
