Ginger and Clove Cookies

Ginger cookies (or ginger nut biscuits) are a delicious ketogenic recipe for the occasional sweet treat. Having cookies is a luxury item, however making them for the occasional snack during the week will take the edge off feeling like you're on a "diet".

Ingredients

  • 1 3/4 cups Almond Flour
  • 3 tbsp Natvia or erythritol
  • 2 tsp Ginger ground
  • 1/4 tsp Cloves ground
  • 1 tsp Cinnamon ground
  • 1/4 tsp nutmeg ground
  • 1/4 cup Butter unsalted
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt

Instructions

  • Pre heat the oven to 375 f (180c). Mix all the dry ingredients together into a bowl
  • Mix all the wet ingredients together in with the dry ingredients. Roll the mixture into 12-14 balls and press flat with a fork.
  • Place baking paper onto a baking tray and place the cookies in the oven for 12-15 mins or until slightly brown on top. Keep in an airtight container.
