Keto Waffles
Keto waffles are probably my new favorite breakfast recipe. They are super easy, delicious and fun to make with the kids. 1/2 Waffle Servings

Ingredients

Cups
Almond Flour
1/2
tsp
xanthan gum
(optional, will hold together a little better if used)
1
tsp
Salt
4
tsp
baking powder
2
Tbsp
Erythritol
2
Large
Eggs
1 1/2
Cups
Warm Almond Milk
1/3
Cup
Butter
Melted

tsp
Vanilla Extract
Instructions
In a large bowl, beat your eggs until well combined.
In a seperate bowl, add the almond flour, baking powder, salt and xanthan gum. Mix thouroughly
Warm the almond milk up on the stove for about 3 mins. Make sure this is not too hot otherwise you'll cook the eggs
Mix with the eggs in the first bowl, adding the erythrtiol, melted butter and vanilla extract.
Combine the eggs with the almond flour mixture and let it sit for about 5 mins while the waffle iron heats up
Follow the directions on your waffle iron manual on how to cook these badboys, (usually around 5-7 mins). Let them sit to cool slightly and enjoy.
