I've made this Beef and Coconut Soup a few times, but tonight was definitely the best. Maybe its just all those endorphins kicking in!

Diced Beef
(500g)

Coconut Milk
(200 ml)

water
(600 ml)

Ginger
grated or fresh

garlic
minced or fresh

Carrots

Brown Onion

Cup
Cherry Tomatoes
Instructions
Add all the ingredients to a large pot except the tomatoes.
Bring to the boil (should take around 5 mins), add the tomatoes, then simmer for 25 mins
Let it cool slightly and serve!
