A Thai dipping sauce can be very simple, usually comprising of lime juice, fish sauce and sugar. Since I wanted to make a sugar-free version of this sauce, I wanted to make sure that erythritol and monkfruit would be sufficiently sweet, without getting any minty or cooling aftertastes.Sure enough, the combination of erythritol and monk fruit worked perfectly! So for future reference, here is how to construct a sugar-free Thai dipping sauce:
6 parts lime juice
3 parts fish sauce
2 parts sweetener of choice (eg erythritol and monk fruit)
