Low Carb Mascarpone Cheese with Strawberries

Mascarpone Cheese is an Italian, low carb cream cheese made from only two ingredients, cream and citric or tartaric acid (to thicken the cream).

The cheese has a very smooth texture with no lumps or graininess. The flavor should be milky and slightly sweet, sometimes with a tangy finish. The rich, buttery flavor comes from the fact that mascarpone has a high butterfat content. (Perfect for the keto diet!)

Mascarpone is known to have came from the area between Lodi and Abbiategrasso, southwest of Milan, Italy. The name is derived from Masarpa, which is another milk product made from whey of Stracchino. Unlike ricotta, Mascarpone is not made from the whey products of milk.

Low Carb Mascarpone Cream with Strawberries

I have attempted to keep the ingredients fairly similar this week, which reflected nicely in my Sunday meal prep day. It usually takes me around 2 hours to make all 5 meals, and increasing the quantity (for a family) wouldn’t add that much extra time onto that.

So for 2 hours on a Sunday, I have lunches for the whole week, and sometimes even dinners! I’m not a big fan of eating the same meal 5 times a week. The diversity is not only better for your health, but it keeps your taste buds from wandering into sugar-land…

Having the same casserole or bulk food every meal of the day is my form of torture. It’s much cheaper and easier to eat in bulk, but the experience is far greater if diversification becomes routine.

Low Carb Mascarpone Cream with Strawberries

Ingredients

  • 1 Cup Mascarpone Cheese
  • 1 Cup Heavy Cream
  • 1 Tbsp Natvia (Or Erythritol) Stevia
  • 1 Punnet Strawberries (Other berries are suitable as well)

Instructions

  • Place the mascarpone and heavy cream into a bowl with the natvia (stevia). Whip for about 1 min.
  • Cut the strawberries into thirds, place half the strawberries into the bottom of the cup. Scoop out the mascarpone cream and place on top of the strawberries. Then cover with the remaining strawberries. Serve and enjoy!

    We have become such a lazy society. We expect the dieticians and recipe specialists to calculate everything for us! Why don’t we ask them to come make the recipes for us while we are at it? How difficult is it to find the calories and carbs in four ingredients and divide by however many servings we made?

    Doesn’t give the net carbs or calories for a serving of the mascarpone whip with strawberries.

      You should always count your own carbs anyway, with whatever recipe you are doing. Different brands have different amounts of carbs. It’s just a good habit to get in to.
