I really appreciate all the work you put into your delicious recipes. I’ve made quite a few and can’t wait to try this pumpkin cheesecake. But I do have a question, instead of 3 medium eggs, would it be possible to use 2 large?

Love your recipes, probably cheesecake for me. Can you help me, I’m coeliac so sweeteners are out due to maltodextrins. As many Keto recipes contain sweeteners that rather cuts back on what I can make. Usually I use cinnamon as a sweetener but for baking I guess the bulk of a sweetener granule is needed?

I wonder if Inulin would work as a sweetener for you? It’s a soluble fibre.. Made from Chicory root.
