Wellthat’sts a tough question. On a strictly low carb diet, as much mayonnaise that fits into your caloric limits would be ideal for the ketogenic diet, however, if you’re following a high carb diet, then I would suggest limiting yourself to 1 tablespoon per day.
Keto Mayonnaise - Homemade Keto Recipes
Ingredients
- 250 ml olive oil Light Tasting Works Best
- 1 Tbsp Dijon Mustard
- 1 Whole Egg Yolk
- 1/4 tsp Salt
- 1 Lemon Juice From Whole Lemon
Instructions
- Place the egg yolk and Dijon mustard into the bottom of a bowl. Whisk together until combined.
- Slowly, add the olive oil, mixing consistently throughout the process. I cannot stress how slowly you have to pour this oil in, otherwise the emulsion won't work.
- Once the mixture starts to form a slightly stiffer consistency, you can add the oil in more rapidly without any concern.
- Mix in the lemon juice and salt. This will give the mayonnaise a lighter colour and make it taste just like real mayonnase.

I’ve been on the Keto diet for about 3 weeks and love my results. I made the Keto mayo and it tasted great. I decided to make a double batch and put in a little too much lemon. Is there a way to tone down the lemony flavor?

If you’ve already put too much lemon, you can either keep adding more olive oil to the mixture to tone it out, but I’d probably just fix it next time 🙂

the recipe that i found before finding yours called for olive oil AND coconut oil. Do you recommend this or is it better tasting with just the olive oil. I have always LOVED mayo, but I want to find a recipe without all of the junk in it. I especially like the Mexican version of mayo that has more of a lemon/lime taste.

Definitely only use light tasting olive oil, coconut oil will change the taste pretty dramatically. I hope that helps

Egg Shells are the only part that could potentially have salmonella, wash your eggs and you’ll be fine 🙂
