Keto Mashed Cauliflower
Ingredients
- 1/2 Head Cauliflower
- 1 Tablespoon Butter
- 1/2 Cup Parmesan Cheese
- 1 Tablespoon Heavy Whipping Cream Pure Cream
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
Instructions
- In a large pot with a lid, bring a pot of water to boil.
- Slice the cauliflower “florets” off from the stalk and place them into the boiling water.
- Cook the cauliflower in the water for 20 mins or until tender.
- Drain the water from the pot, and using a potato masher, mash the cauliflower into a paste like consistency.
- Add the Butter, Parmesan, Cream, Salt and Pepper, and continue mashing until all the ingredients are combined. Serve Warm.

This sounds yummy! However, isn’t 10g of carbs alot? According to my keto tracker, I’m only allowed 14g of carbs per day & 1105 calories. Mixed reviews on ” calories don’t matter ” &” calories do matter” . According to my kept tracker , it does. I’m confused & frustrated!

Hi Mary, I’m guessing you’re tracking total carbs right? Vegetables are an important part of your diet, so I wouldn’t worry too much about the amount of carbs coming from vegetables.

I made the cauliflower mash with butter & sour cream, herbs & s&p – yum! Ì used the blender to make it smooth n creamy. My teenage kids all loved it & they still don’t know they were eating mashed potatoes ?

Hi, I have been doing keto for almost 2 months. I have had some success.For health reasons, as I have Lyme disease, leaky gut and hormonal inbalances, my ability to metabolize even small amounts of carbs is extremely Limited. I would love to know of a recipe, that doesn’t increase my insulin, namely an easy keto treat.as I seem to be ultra sensitive to even Keto desserts. Something that has a dairy alternative as well.
