Low Carb Banana Bread – Keto Friendly
I had to create this low carb banana bread. Low carb bread is one of my specialities. Leaving out and easy keto banana bread recipe would almost be like torture for the low carb diet.
Banana bread is something that I missed a lot when I started the ketogenic diet. The warm feeling of a cup of coffee and a slice of banana bread at the coffee shop after a fast loop around the river on my bike. Nothing could beat it.
So what are the key metrics that define a good banana bread recipe? Well, it has to be a healthy banana bread recipe… it has to be a low carb banana bread recipe, and it also has to be a moist banana bread.
The nutrition of a banana can vary between sizes, ripeness and season. They are usually about 23g of carbohydrates in every 100g of banana consumed. For this reason, they are not allowed on the ketogenic diet. The low carb ketogenic diet is designed to limit carbohydrates, teaching your body to burn fat instead of carbohydrates for fuel.
So what is the secret that makes this low carb banana bread so good? Banana extract. I work close to a cake store, and realised that they have banana extract which tastes like banana, just without all the carbs that bananas contain.
This flourless banana bread is perfect for a low carb breakfast option. Ditch the low carb cereal and pick up a slice of banana bread, top it with some of my keto low carb raspberry jam and you have a low carb breakfast for two. Keto Banana Bread
Ingredients
- 7 Eggs
- 2 Cups Almond Flour or 1/2 cup coconut flour
- 1/2 Cup Butter or 1/4 cup olive oil for dairy free
- 2 Tbsp olive oil
- 1/4 Cup Sunflower Seeds
- 2 Tbsp Chia Seeds
- 1 tsp baking powder aluminum free
- 1/2 tsp Xanthium gum
- 1/2 tsp Salt
- 4 Drops Banana Extract
- 1/4 Cup Erythritol
- 2 Tbsp Sesame Seeds (Topping)
Instructions
- Preheat oven to 355F (180C)
- Put the eggs into a bowl and beat for 1 - 2 mins on high.
- Add olive oil and melted butter to eggs, continue beating.
- Add remaining ingredients except for sesame seeds. Will become quite thick
- Scrape into a loaf pan lined with baking paper. Place sesame seeds on top
- Bake for 45 minutes. (Remove once a skewer comes out of the middle clean).

We do not eat chia seed or flax is there some other ingredient I could use in place of the chia seeds in this recipe. I would really like to try this recipe as my children miss banana bread since we have gone keto. Thanks for some great recipes.

I would like to use coconut and almond flour. So how much coconut flour and how much almond flour would I need to make the banana bread recipe?. Can walnuts or pecans crushed be substituted for the chia seeds or sesame seeds?

I always use coconut flour in 1/4 of the amount that you would use almond flour. Hope that makes sense

Hi AAron, if you use coconut flour instead of almond flour do you still need 7 eggs? Also, I am somewhat new to keto. Are Erythritol and Xanthium gum essential ingredients? Can I omit or substitute with something else?

Keep everything the same, only use 1/2 cup coconut flour 🙂

Loaf makes 16 slices, and a serving is 2 slices.

I use one that I got from my Local Cake Store. However, not everyone has access to my local cake store, so I found one on Amazon in the ingredients link which I thought might be suitable 🙂

in them? I have a lot of coffee flour and been looking for recipes (now that I bought several bags of it ).
